My first homemade pecan pie. Turned out good. And of course some baked bacon that was chopped up and thrown into the green bean casserole. Because bacon.

So I decided to do filet mignon on the grill tonight. Started with a good slice of grass fed beef. I pat the meat down with a copious amount of Greek seasoning. I do mine Pittsburgh rare, that might be black and blue to some of you all. I sautéed them in the cast-iron skillet first to blacken all the edges. Once the edges and faces are blackened, throw them over the flame and bring them to your specific temperature. My women like them well done… Hard to believe with filet mignon! Don’t forget to let them rest after you grill them. 10 minutes should be plenty before serving. I sometimes cover them in foil until I’m ready to serve. My personal steak I left open and just plated it with some homemade potato salad and a liberal dollop of grey Poupon. Serve with a good full-bodied red and you are in paradise!
Local grocery store put their fresh turkey on special. Picked up a 12 lb bird for $7 Five hours later..............
Stuffed bacon pepper Jack mac n' cheese burgers, and more velveeta shells n cheese for a side. Paired with a domestic beverage.... My health screening was good, must be the light beer.

Had to whip up a quick lunch today! Anyone can do this! You get a cast iron skillet from your local discount big box store. Season it. Put in oil and pure butter. Sear the meat of your choice and then put it over the flame. For burgers, I like to put a fried egg on top with avocado, onion, tomato, Swiss cheese and whatever else you like! I use mustard but maybe you want to use hot sauce or barbecue?
OK guys, you need to line up with the Puerto Rican people in your area. They make something called Coquito and it is their version of eggnog. It is an alcoholic beverage. I have three sources in my area which I am blessed to be able to contact and get the product from. You’ll be glad that you did!
So here’s another trick that you guys can use when you just can’t figure out what to eat. Take everything you have in the refrigerator that is a leftover, get a frying pan, put some butter in the pan and start cooking some eggs. In this recipe I used six eggs. Throw the leftovers on top of the eggs, for me today it was fish and rice, and wrap it like an omelette. Takes just a few minutes and is delicious. top it with some shredded cheese and hot sauce and you are golden! As a libation, I like Blanco tequila with a squeeze of lemon and a twist of salt!
I'm moving next door to docgsx's house. No pics, but I cooked an angus choice rib roast last night, on sale for 6.99/lb. Bought the whole thing, got 1 4 lb roast, 3 2 1/2 inch steaks, and 5 normal sized steaks. I let the roast come to room temp, seasoned it with salt and my secret spice blend, 550 for 20 minutes, 170 for 35 minutes, let it rest for 10, and commenced to make a glutton of myself. I must've really stretched my stomach out 'cause I woke up this morning hungry as all get out.
I got a Christmas gift from a patient called angels envy. After tasting it, it inspired me to get out on the grill! So I decided to grill steaks, burgers and shrimp. The burgers are turkey burgers with bacon, second burger is beef with Swiss and mushroom, and then A ribeye for mom.
