Are there any EFI that work with E85 fuel?
I'm as dumb as a pocket of hair on this stuff so its not easy I will stick with a carburetor.

Absolutely, there are lots of system that are E-85 ready just confirm before picking one. Mostly it’s just more corrosive so seals and soft parts need to be rated for it. Keep in mind you use about 25-30% more fuel per HP using E-85 so you need larger injectors. So if a system is rated to make 500 Hp with normal gas it make only supply enough to make 420 ish Hp on E-85. My numbers are just ball parks so you get the idea....

And beside that, there are a few I've read about that have "flex fuel" capability, meaning the system can deal with any amount of ethanol in the tank, whether you run 100% E85 or any random mix of gasoline/E10/E85. Holley is one I remember reading about, they don't rely on a so-called fuel sensor, but rather the wideband O2 sensors in the exhaust give the ECU enough alcohol percentage info to adjust mix properly.

    With FiTech.
If you have E85 safe fuel system components, you add 30% to your engine's volume. So if you have a 455 you tell the FiTech unit it is a 592 and then you may need to tweak settings like initial prime shot for hot and cold, decel cut, tip in and such. (most parameters will "auto-learn", but minor adjustments to dial in for your driving and car help a bit.)

Yes, an "E-85" toggle to adjust all the tables across the board from all blends non-ethanol through E-85 would be nice since it is not a parallel track for all the fuels. Some change the metrics to a wide degree in different areas.

A set of maps for each ratio of ethanol would be a great benefit to the "plug and play" side, but in reality, with the variations in builds people have, getting it up and running and then tuning to the specific car and needs is the best path and not that hard for anyone that has put knowledgeable time and effort into their car.

And as stated, keep in mind the "rated" HP supported for each of the FiTech units, and buy more than you think you will ever need. Most are like 400/600/800/1200 HP ratings.

Sort of like Imperial and Metric, or LED and incandescent Lumens vs Watts for bulb light output, these EFI "HP vs CFM" make the mind to backflips until you mess with it and figure out what it really means.

I would get a flex sensor,...then you can still operate if in a pinch and can't find corn
