Do you have enough caster in the front end? You need 2 degrees, at least. Once you've confirmed that, you need wo learn how to adjust your steering. I agree that whatever you need for parking is too much assist for driving.
Electric power steering followup. I discovered one of the u-joints on the steering shaft was not tight. After tightening it we did a 800 mile trip last weekend last week end much better.
