Does anyone know the differences between the 1968 350 and the 72-80 350s.? I'm looking to replace the long block in my 68 J3000 with a remanufactured, and hope to do so without fitment issues.

Shouldn't be any fitment issues afaik. Differences are internal wrt oiling.

Could probably pick up a good used one for a lot less than a reman. & have it be a better engine.

Pls post a pic of the truck - My first vehicle was a '70 Wagoneer w/a Buick 350.

I agree a Reman engine may not be much better than a used one. I would either rebuild yours or find a good runner. But yes any 68-80 buick 350 will swap in.
