When I was under the car the other day removing th gas tank/installing the electric fuel pump, I noticed the original shocks on the car are coil overs. Are they adjustable? Any background on these and whether there are replacements available? Was this a GS only option?

Sounds like an aftermarket "booster" type shock. These were really popular in the 70s and early 80s.

What did these do? Were they adjustable at all?

More than likely they are the overload shocks like Jason mentioned. They were most commonly used on cars that were used for trailer towing and they are not adjustable, they simply add a little extra firmness for extra loads.
