cooling options/questions

    OK, this is kind of a general question with little direction. I'm looking for some insight into cooling options and opinions any of you may have.
    First off I'd like to switch over to an electric fan for my 69 GS California. It has the stock 350 in it at the moment and will see a new intake, headers, cam, some head porting, distributor curving and carb modifications this coming summer. The short of it is I'd like to make this mild 350 into a one mean little bastard.
    What cooling options do you guys recomend? Any electric fans on the market that you have found fit like a glove? Is an electric fan the right choice or would a clutch fan be a better idea?
    Thermostats? With all of the reading I've been doing lately I think I've confussed myself. An article I recently read on GrapeApe.com gave me the impression that I should run the engine a bit on the hot side for performance. Maybe 190 or so. I've always thought 170 would be a bit better, atleast for longevity. What do you find works best for a street driven car.
    I'm just trying to get a little insight on this subject. I've read a lot of material from chevy and pontiac sources but I'd like to get some on Buick specifically.
