How can I be able to tell if a 1968 GS is a true GS I got my eyes on a 68 bench seat car with a 4-speed

Could 43327 be a GS California?

A '68 GS California would have the VIN start with 43327, but so do Special Deluxes. You can't tell a GS California from Special Deluxe by VIN

I don’t think any GS Californias were four speeds though; all I’ve ever seen were 4 barrel 350 with an ST300 or Turbo 350 in ‘69.

Patrick’s..... without documentation, can’t prove if it’s real.

There's some weird things on that car - has the vinyl top trim - but no vinyl top. Look under those c pillar badges and see if there's any pieces of the vinyl top under it. That 4-speed on the floor doesnt look original - I'd look up under at the gas pedal base and see if the ST300 throttle switch is still there - or least has the gas pedal w bracket for it - I bet that car orig came with a ST300. Also, that front seat doesn't look like a Special Deluxe style seat. Every '68 GS CA I've heard of has a vinyl top and ST300 trans.

It does have the right hood scoop and hood trim, the trim is missing from the trunk. What about the engine is it a '68 350-4 with the engine code PP? Maybe the build sheet is still under the back seat or on top of the gas tank - with out that you wont know for sure - since the car has a bunch of different stuff on it. Does it have a GS grill?
