Going off when unplugged doesn’t mean you don’t have a problem. It means your problem isn’t in the wiring. Could be a bad sender, could be low oil pressure. You need a guage but changing the sender will tell you if it’s the problem.

Leaks and oil pressure are two different things. Leaks mean check the level and don’t get low. Low pressure means start finding out why.

Max Damage I'm working on it!

A pressure gauge is kind of necessary for this type of troubleshooting. What you describe (it comes on at hot idle) could still be the sender, or it could actually be poor oil pressure. The Gauge will tell you what its actually happening.

EDIT: Sorry I see now that I am restating what Patrick already covered.

here's some pics to show. Sender unplugged. And looks like my temp sensor on top of engine has nothing on it.

Honestly.....Your sender is likely fine if it only comes on when HOT.

Looks like the AC compressor clutch wire is tied to the AC compressor.

See if you can find the green wire for the temp sender in the wire bundle running on top of the passenger side between the intake and valve cover.

If the TEMP light does not come on with the engine not running the key in "ON/RUN", then connect the green wire to the terminal on the sender and check again.

If it does come on, and then stays on with the engine running, but still cold, the sender is bad, and might be why it is disconnected.
