Looks good D. The wife whips up chili in about 20 minutes and its good. She can't cook to save her life, but she nails it.
That needs a good brine and cold smoke for about 72 hrs! And some bagels, and some cream cheese.... Tried my hand at cold smoking many years ago, takes lots'a time and finesse, may try it again now that I have a bit of time on my hands.
So many ways to make chili. I've used several different recipes. Made it in a crock pot a few times as well.
I was thinking 1/3 of a cup of chili powder seemed a lot. I guess the double batch explains it... I inherited a couple of these from my mother, and the rest were given to me by my uncle Budd, who worked in restaurant supply for his whole career (He was briefly a Toyota service manager). They could use a good sharpening.
Tonite,....Mushroom, onion, brwn rice, boneless pork chop bake. 350 for 1hr, covered. Rice blows up to 1" thick under the chops. Four chops, 1 cup brn rice, sliced schrooms & onion, 1c broth, 1c h2o. Grill marked the chops outside 1st. Used this Williams-Sonoma, Diablo flavor rub, gives the dish a slight kick. Green beans & a salad. Wine of your choice!
My second attempt at fajitas, chicken, steak, shrimp, homemade salsa and guacamole. I’m sure I need to practice…
I've got turkey chili going in the crockpot. I chopped up and threw in four long hot peppers and a couple of habaneros. This batch will have plenty of heat
Getting with it now... grilled salmon, baked potato, green beans, salad and a little b & b...beer & burbon!
