I have the TA SP1 intake on my 462. I plan on using dual electric fans. Other than directly into the Intake Manifold tappings, where is another good place / way to install the temp sensor that activates the fan(s) ?

You could use hose tap and catch it leaving the t-stat housing,

or tap/weld/solder a fitting to the radiator near the inlet/return at the top of radiator.

Some folks take the temp readings for a switch from the bottom/supply hose to the pump to read the temp of the coolant returning to the engine, rather than the hotter leaving the engine.

I had a feeling I could use a hose tap. This motor is in a 1986 Buick Regal Limited (was Olds 307).
I was thinking of using one intake tap for the factory warning light & the other tap for an electric sensored Auto Meter Water Temp Gauge.

That would work. Since you can get switches for several temperature points.
If you have the ability to run the car now and check the temps, then get the switch that matches the coolant at the switch location and co-witnesses the temp gage for your ideal indicated temp. (you could temp manual switch, get the car to desired operating temp on the gauge and thoroughly heat soaked, then sample the switch(es) locations to dial in a specific temp switch)
