Ok, so you are attempting true circuit analysis. I think it's time you pick up a book to really learn the techniques. The 10% capacitance question can not be answered. That depends on what the cap's specific purpose is in the circuit and the design of the circuit.

    As far as caps go...
Power supply caps will show bad if you hear line frequency hum in the circuit. Also, look for the tops to be swollen, as this is a sure indication that they are going to blow up. In a tube amp, you might get a "motorboat" sound, which is low frequency oscillation.
Coupling caps are a little more difficult to troubleshoot. Signal loss is an indicator. Without an input signal, check voltages to ground before and after. They're meant to block DC voltage, but can become leaky and change the bias on the next gain stage.
It's difficult to teach you much without some electronic theory. Everyone wants to be a tech, but there is some basic knowledge that you should have.

I've been learning Spanish via Rosetta Stone and now Duo Lingo for the last year. Not great but I can read more than I can hear.

I've been to Mexico many times for diving trips and a few times to Mexico, Honduras, El Salvador and Dominican Republic for work. A few cruise stops in Spain as well. Still going to be a while before I will be understanding the rapid-fire speech.
