I have installed the passenger side door on my '70 GS with the weatherstripping off. When the door is latched the door still has movement in slightly, but when pulled outward it lines up well with the quarter panel and rocker. The front edge of the door lines up well with the front edge of the rocker panel. The door gap between the rear edge and the quarter panel is between 3/16" and 1/4". I can add to the door edge if needed.
After installing the door weatherstrip, the the door is firm when closed and still lines up well.
    So, three questions:
1- is the movement of the door, without the weatherstrip normal? Do need to replace the latch?
2- should the weatherstrip remain installed while further paint prep (high build primer and block sanding)?
3- does it sound like I am on the right track?

Thanks for any comments and advice.

That in and out movement is normal,.if the door moves up and down take a look at the striker

I would leave the weatherstrip off,..you can set the door position with some paint paddles or whatever to hold your door where you wanting

You can easily take care of the final adjustment with the striker

Tip: put a liberal amount of vaseline between the hinges,.striker, latch screw holes, bolts etc any where something needs to move on fresh paint

    Good Evening hugger:
    Thanks for your advice.
If I understand your Vaseline comment, the door hinges, striker, door latch as well as the door are off the body when painting. Is that correct?

It just depends,.certainly not required. With metallics its best yo have the panels on the car for instance, but with solid colors I painted t them disassembled
