I just installed a set of Auto Meter electrical gauges on my GS 350, does anyone know what the normal oil pressure reading should be at idle and while driving?

The lowest pressures will be at idle in gear with the oil HOT. To get the oil as hot as it will get requires driving the car at highway speeds for at least 15 minutes. If you have at least 10 psi under those conditions, that is satisfactory. It may have less. That is OK as long as it goes up with increasing RPM. (See below)

A completely stock 350 should have 37 psi at 2400 RPM, again, with hot oil. For any higher RPM driving, you'll want 10 psi for every 1000 RPM, so at 5000 RPM, you'll want to see at least 50 psi. To get the pressure up requires an oil pump set up with the proper clearances and a stiffer oil pressure relief spring (easily changed).
